Fresh, filtered water makes a noticeably better brew. Black tea wants a full boil; green and floral teas prefer a gentler heat.
Tip Earl Grey: 95°C. Jasmine: 80°C. Butterfly pea: 90°C.

Tip For the 720 ml pot, three teaspoons. Adjust to taste after the first brew.
Fill the pot with hot water, close the lid, and wait. The glass lets you watch the leaves unfurl through the brew.
Tip 2 to 3 minutes for jasmine and earl grey. 4 to 5 for butterfly pea.
Slide the magnetic filter closed. The leaves stop brewing, the tea pours clean. The same leaves are good for a second steep, just add fresh hot water.
Tip Butterfly pea? Squeeze in a slice of lemon, the brew turns from blue to violet.
